"Clover Hill’s NV offering is a crisp, fresh and elegant delight. A blend of 53% Chardonnay, 42% Pinot Noir and 5% Pinot Meunier with some partial malolactic fermentation and two years on lees, this is a wine to tantalise the tastebuds. Crisp apples, apricot, lemon blossom and crushed oyster shell are all very typical flavours from the Pipers River region of Tasmania but these lean and fresh flavours are coddled with toasty, biscuity notes with a hint of croissants fresh from the oven.
