Daosa stakes a claim to be one of Australia's finest and most interesting sparkling wine producers. Sourced from 5 high altitude vineyards in the Piccadilly valley, all planted in the 1980's and 90's, winemaker Xavier Bizot chooses to embrace the natural flavours and textures of Australian cool-climate fruit, resulting in a full-flavoured but remarkably elegant wine. Maturation in old oak gives the wine outstanding layering and depth of flavour. Very fine. - The Wine Emporium
