According to traditional methods, our 50-year-old Amontillado is born of grape must of the Palomino fino variety, carefully cultivated in white albariza soils, highly prized for obtaining very fine musts of great quality. The grapes come from our own vineyards located in the Balbiana and Miraflores vineyards, considered the best in the Jerez region. Harvesting takes place at the beginning of September, when the grape reaches its perfect maturity, and it is the yolk must, obtained without exerting pressure on the grapes, the one destined for the elaboration of the Amontillado Viejo.
The alcoholic fermentation is carried out controlling at all times the temperature and taking advantage of the natural yeasts of the vineyard. Once the fermentation is finished, the musts are fortified with wine alcohol up to 15 °. Throughout six generations, in Bodegas Hidalgo - La Gitana SA, we have been selecting some boots of this wine of special quality. After so many years, the wine has obtained a deep concentration in aroma and flavor. Although originally intended for the private consumption of the family, it has been decided to bottle a limited amount. Only some specialized stores have this splendid wine.
