"2024 was a warm and dry season, allowing us to pick pristine, high quality Pinot Gris fruit. Approximately 10% of the wine was wild fermented in older oak barrels and 10% wild fermented in tank; this adds complexity and texture to the wine. The remaining juice was fermented using a range of fermentation techniques and yeast strains to enhance the aromatic characters of the wine. This wine has beautiful, lifted pear, floral and musk characters on the nose with some interesting spicy complexity. Whilst the powerful palate is packed with flavour, it also has added complexity and weight as a result of the wild ferment. The wine finishes with lovely crisp natural acidity." - Notes from Holm Oak
