It was 1855 when Colombian-born Edmond de Ayala sought to learn the subtleties and complexities of the champagne business upon visiting the Viscount of commune Mareuil. It happened to be a trip intertwined with fate itself, as this is where he met the Viscount's niece, Gabrielle d'Albrecht, and they married soon after. Her magnificent dowry to Edmond included the Château within the village of Aÿ as well as the vines in the neighbouring fields, and thus, the legendary house of Ayala was born! 

Champagne Monday this week looks at what has been a very consistent favourite for many years, and has remained at fantastic value - the NV Brut Majeur! With a beautiful Chardonnay dominance, this bubbly is wonderfully aromatic on the nose, with a fine complexity once greeting the palate. The touch of Pinot Meunier brings a touch of fruitiness on the mid palate, making for one very moreish bubbly that we can't recommend more warmly, especially at this price point! Take the chance this week to pop a bottle if the occasion calls for it, but then again, Champagne for Champagne's sake can never be a bad thing too...

"Brut Majeur perfectly represents the AYALA style. The Chardonnay, emblematic grape variety, present at 55% in this cuvée expresses all its purity and elegance. The same sheer spirit is expressed through the low dosage and the stainless-steel vat vinification, which ensures that primary aromas are respected. An extended ageing of three years in the cellars confers the final touch to this cuvée, where balance and precision coexist with finesse and elegance. The fruit of a tailor-made blend, Brut Majeur includes more than 70 crus from all of the Champagne region. This exceptional sourcing makes the most of the terroirs’ richness: Côte des Blancs, Montagne de Reims, Vallée de la Marne, Aube, Vitryat, or even Sézannais. At the time of vinification, 120 individual stainless-steel vats each hosts a specific cru, grape variety and year. This careful handling of the raw material makes it possible to preserve the integrity and personality of each cru, to as to create a blend of an extraordinary diversity." - House Notes
