"Production: The last edition was way back in 2022 and was a global sensation! The 2024 is 100% Sangiovese from King River Estate - a spectacular vineyard nestled between the King River itself and a stunning bluff - near the sleepy town of Edi in the King Valley Wine Region. Wild fermented with as much whole berry as possible in small open vats at our mountain winery in Whitlands. Twice daily gentle hand plunges throughout its maceration time with fractions pressed off over the course of 18 days. The ruby rosé portions and the more savoury longer skin contact portions were blended together post-ferment to make a delightfully vibrant light red. Aged in stainless steel for 6 months and then bottled unfined and unfiltered with a small addition of sulphur.
Tasting notes: A nose of five spice, goji berry and pink daisy with a luscious palate of raspberry, plum and black pepper. We recommend this with CWA sponge cake with pink icing. Originally designed to drink cold, the umami of the Sangiovese retaining its punch at low temp and the grippy tannins making for a dry chewy finish but ultimately works just as well at ambient temperature." - Winemaker Notes
