"A mix of 3 clones, MV6, small amount of 115 and 114. Picked in one day with a range of ripeness between these clones, acid lines and more savoury elements. All fruit was completely destemmed and then approximately 15% stems added back to build complexity and structure. Left on skins for 6 weeks to create greater complexity and savoury elements. Aged in 50% new French oak, extra tight grain for slow maturation, the same type of barrel we use for the Chardonnay. Aged for almost 24 months until the tannin structure softened. 3 months in bottle before being released." - Winemaker Notes
