"Process - Fermented in an Italian Terracotta Amphora. On skins undisturbed for 7 months. Unfined, unfiltered and bottled by gravity with minimal sulphur dioxide added. Nose - More exotic characters like ginger and cardamom spice. Palate - Mouth-watering acidity and grippy textures. Nutty, briny characters that balance the grape’s inherent citrus fruit flavours. Food match - Its acidity goes brilliantly with anything remotely spicy, particularly Asian and seafood dishes, but it can also cut through greasier foods, such as pork dishes." - Winemaker Notes
