"This beautiful champagne comes from the Côte des Bars in the southern part of La Champagne – and almost a neighbour of Burgundy – where of course pinot noir reigns supreme. It was founded in 1846. The 55% pinot noir in this blend is derived locally from their great vineyards, and the 45% chardonnay is from Côte de blancs, with 'Chouilly' showing strongly. They do not use Meunier. The nose reflects orange blossom, golden dancing lady orchids and acacia, leading to a palate of pear, yellow stone fruit, mandarin and orange zest. There is a layer of raspberries, blueberries sprinkled over with a nutty layer of macadamia nuts and smoked almonds- reflecting the oak use from reserve wines of which there is 40% in the blend. It has a very energetic mousse, lovely harmony, textured acidity and a soft creaminess. Some roasted bread appears with cashew-nut butter – along with lemon curd and hints of ginger. A lot of the fruit is grown on Burgundian soils – with Kimmeridgian limestone – clay soils. For the pressing, they use the Coeur de Cuvée – which is not just the first pressing 'Cuvée' but the 'heart' of the cuvée – the very finest part.
