With a south-southwest plot exposure, the soil is made up of pebbles mixed with very light sand (pudding), it promotes the expression and full maturity of the grapes. The harvest is manual, the grapes are picked at their optimum maturity and are carefully sorted to bring the best out of the harvest. Vinification takes place in thermoregulated stainless steel vats, skin maceration to obtain a pretty light salmon color. After settling, fermentation at low temperature 18° which gives a very floral nose (wild rose) elegant and harmonious. Bottling takes place after 8 months, it undergoes light filtration, a noble and natural deposit may appear. Clos Rosé is produced between 3000 and 4500 bottles. - Winemaker Notes
