"Any wines made from my own vineyard now will go under the Domaine Defialy sub-label. Dry grown, organically farmed (uncertified) cabernet sauvignon farmed from our metcalfe site here in the macedon ranges. 10% whole bunch, 14 month elevage in 85% neutral french oak + 15% new austrian (stockinger) oak. Refined cool climate cabernet sauvignon. Medium bodied, silky tannins and freshness on the palate. Might just be my favourite wine I made in 2022." - Winemaker Notes
