"Pristine parcels from East Coast and Tamar Valley vineyards were hand-picked, chilled and then committed to French oak barrels. Eleven months in wood with partial malolactic fermentation and encouraged lees contact then completed the vinification and maturation. There is little doubt that no wine style has changed quite as dramatically in Australia as Chardonnay, and Tasmania has really been a driver of that. A fuller understanding of cooler sites, and improved knowledge of, and access to, better clones, has transformed a once ubiquitous and full-bodied style in something much more nuanced and detailed than before. Our Evenfall Chardonnay aims to be medium-bodied but fine and elegant, with floral notes and herbal freshness, through to a richer, lemon-curd textured palate and finish.
