"When the call came in from Cory Hope who manages the Shays Flat & Landborough vineyards under organic certification that the Grenache was going to be available to us, I couldn’t of jumped quicker at the chance! The whole idea here is just to make a delicious red wine that speaks of Grenache that is very Shays Flat, 20% whole bunch, open concrete fermenters, one pump over per day very gentle, indigenous yeasts, basket pressed after 12 days, élevage for 12 months in 228L & 500L Casks, estate bottled after 3 months in tank with a small amount of sulphur. Pretty stoked with the results of this wine & really exciting to see it evolve over the course of time." - Winemaker Notes
