"Much like Patricks single vineyard wines, volcanic soils an incredibly important element in creating the style of wine that is his signature. The vineyards are located on Australia’s unique limestone coast. All share a common shallow volcanic top layer with complimenting subsoils of limestone and basalt. This part of Australia is the 3rd largest volcanic plain on earth, still harbouring some 400 dormant volcanos. Patrick has found two specific vineyards, one in Mt Gambier he has worked with before and always like the mineral drive it gave, however there wasn't enough generous fruit. Having been a big fan of good Coonawarra Chardonnay (Balnaves), because of its generosity and fruit weight, Patrick could see the potential of these two areas together.
The fruit is whole cluster crushed, pressed then drained off into tank for settling. Primary fermentation takes place in barrique and tank with approx. 15% new oak used. The wine see full malolactice fermentation before filtering, fining and bottling" - Winemaker Note
