From the 2017 release of Bin 311, fruit sourcing moved from single region to multi-regional. Today the cool-climate vineyards of Tasmania, Tumbarumba, and the Adelaide Hills are our primary sources of fine quality Chardonnay. In true Bin 311 style, not unlike Yattarna, it exhibits lemon and lime aromas and a mineral acid backbone, complemented by barrel fermentation and maturation in new and seasoned oak. "Pale straw with aromas of flint-struck white peach, nectarine and citrus fruits infused with hints of soft spice, clotted cream, nougat, almond meal, meadow flowers and stone. Initially creamy and mouth-filling, with a impressive fruit purity. There's an element of savoury restraint to its palate shape, with fine acidity lending propulsion, and textural filigree from a patina of fine, light phenolics. The finish is long, pure and precise. "The 2024 Bin 311 Chardonnay leads with toasty notes of pan-roasted dry spices, banana, toasted cashews and white peach. The wine is rich and generous, with a seam of fine, salty acidity that courses through its heart. The fruit is sourced from Adelaide Hills, Tasmania and Tumbarumba, and while the conditions in each of these diverse regions differed somewhat, they were aligned in that it was a high-quality growing season.
