Description

"Sang de Pigeon (pigeon’s blood) is a nod to my former life as a jewellery valuer. It’s the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this fragrant and deeply coloured wine were grown far to the south-east, in South Australia’s Barossa Valley.

Sparse bunches with small berries gave us powerful, intense fruit demanding longer maturation and a higher proportion of new oak. The opulent Barossa Valley fruit was blended with the high-toned fruit of Naimanya in Eden Valley. All destemmed, wild fermented in open fermenters, matured for 32 months in French oak, 42% new. Unfined and unfiltered." - Winemaker Notes
