"Fruit was hand-picked before gentle de-stemming and crushing followed by 3.5 hours on skins to extract minimal colour. A cool fermentation followed which retained the aromatic, herbal notes and focussed the crisp, textural palate. Maturation on lees for 2 months helped increased texture prior to bottling. This beautifully pale rosé has lovely aromatic wild strawberry and cranberry notes on the nose. The palate is tangy, dry and textural with creamy berry fruit and a deliciously moreish finish. Flows long, gliding rather than driving with hints of red apple and rhubarb for interest.
