The truth is, and the ultimate test when bubbles are gone, that great sparkling wine is first a great base wine, so it all makes sense that he does well without a second fermentation. 100% Chardonnay, Kimmeridgian limestone and marly clay, aged 2 years in amphora (30%) and oak barrel (70%). Lively and energetic from the get-go. There’s something herbal about it, fennel, almonds, citrus skin. It’s pithy, limey, with a hint of cheese rind, yellow apples, and pears, all laced with salt and cool river pebbles mineral feel.
