"Organic and biodynamic Chenin blanc from a blend of Les Murailles and l'Aiglerie (plots located between Savennières and La Possonnière along the Loire), and Les Mauriers. All southwest-facing, schist and aoelian sand soils. Matured for 11 months in underground tile-lined tanks, amphoras, and 400L barrels, spontaneous malolactic conversion. “La Saponaire” literally translates to “grass soap.” La Saponaire is Savennières’ emblematic plant and the origin for its name and inhabitants – the Saponarians. Wild blossoms, flower pollen, beeswax, fresh herbs, raw seeds and nuts. It’s a meadow! Lithe, understated juice, with underlying chalkiness, zing of grapefruit, and underripe orange.
