"Grape variety is Carricante (and small batches of other local grape varieties). Harvest time is middle of October. The fermentation lasts some 15 days after a brief skin maceration (fermentation in stainless steel tanks). The aging is conducted in stainless steel tanks, spending 5 months sur lie with regular batonnages every week. Good aromatic intensity, yellow citruses mixed in herbs. Mouthfilling, round, good freshness, intense minerality; the finish immediately recalls the soil where it comes from. Pair with risotto with fresh clams, selection of fried fishes, or baked seabream under salt." - Winemaker Notes
