"The grapes are harvested by hand in October. After whole bunch pressing the juice is fermented at low temperature in steel tanks for 15-20 days. Aging in steel tanks on lees for 5 months. Intense aroma, yellow-peeled citrus on a grassy background. With floral notes of mandarin blossom and candied ginger, the palate is tickled with salt and lemon. Full, intense and linear. "Etna's north slope, or ‘versante nord’ is better known for its reds, but there are some really impressive Carricantes being made there too. This example from Davide Rosso is whole-bunch pressed then vinified and aged in steel. It has a distinct richness of lees which gives it a soft and round feel in the mouth, while the fresh acidity adds tension and energy.
