"The wine is aged until malolactic fermentation is complete in stainless steel tanks. After malolactic fermentation, it is aged for at least 18 months in medium-large oak barrels, with only a portion in small French oak barrels. The length of aging is decided on a case-by-case basis based on the vintage and the wine's characteristics (the length of time is directly proportional to the wine's structure). The wine is brilliant, ruby red in colour with subtle orange highlights. It has an intense, ethereal, spicy, and slightly woody aroma. On the palate, it is warm and smooth, with light, sweet tannins and a very persistent finish." - Winemaker Notes
