Viniculture: Osmington vineyard, sandy clay soil, 20% hand-picked, rest machine harvested, maritime climate
Vinification: whole bunches added to vat, machine component on top, no crushing or de-stemming, wild ferment on-skins/lees, pressed into old French barrels/25% new, natural malolactic ferment, unfined, unfiltered, organic practices, biodynamic, minimal s02, vegan.
