Description / Reviews
"Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. In French oak barrels for 10 months. 20% new barrels. Regular stirring of the lees." - Bader Mimeur, Winemaker
"From the heart of Chassagne-Montrachet in Burgundy, this estate-grown Chardonnay is sourced from the Champ Derrière parcel, directly behind the Château. Planted on classic clay and limestone soils, the 25–30-year-old vines produce a wine of depth and precision. Fermented and aged in French oak barrels (20% new) and matured on fine lees for 12 months, it embodies the elegance and balance that make white Burgundy so sought after." - Franc About Wine, Importer
