"Bodegas Cerrón is a family estate rooted in the high-altitude vineyards of Fuente-Álamo in southeast Spain, where viticulture has been shaped by isolation, altitude, and time rather than trend. Working primarily with old-vine Monastrell grown on limestone-rich soils at up to 1,000 metres above sea level, the Cerrón family champions organic farming and minimal intervention to express freshness and finesse in a region more often associated with power.
La Servil is primarily made from Monastrell with small amounts of Moravia Agria, Blanquilla and Rojal that add complexity and freshness. Grown on limestone-gravel soils around 900–960 m and biodynamically farmed, the grapes are hand-harvested, fermented with native yeasts and aged 12–14 months in large oak foudres and used barrels, producing a wine with vibrant dark fruit and Mediterranean herb aromatics, fresh acidity, firm yet polished tannins and a striking mineral finish. La Servil balances structure and elegance—its bright ruby colour, nuanced spice and earthy undertones make it both immediately appealing and ageworthy, reflecting the unique character of Jumilla’s high-altitude terroir." - Alimentaria, Importer
"The 2023 La Servil is 95% Monastrell from Calderonzillo, Fuente-Álamo, Jumilla and was aged 20 months in foudres. Like a breeze through the pine woods, it evokes wild herbs, thyme and dried flowers. It is dry, with chalky tannins and a fine line of freshness, balancing agility and tension despite its 14.5% alcohol.
