"Louis de Sancerre is one of the great men in the history of France: he was both a companion in arms of Du Guesclin and a friend of King Charles V. In recognition of his merit and talent, he was named Marshal of France in 1368 and then Constable in 1397. This vintage pays tribute to this emblematic figure of the city of Sancerre. This vintage has a strong character, like the Constable: lively, frank, fine and complex. The flint plots selected for this vintage were harvested at optimum maturity in order to express all the precision of this terroir. Fermentation is carried out in a temperature-controlled stainless steel vat, the yeasts chosen are neutral yeasts that reveal the terroir. Aged on fine lees in stainless steel vats, no passage in barrels in order to preserve the purity of the juice." - Winemaker Notes
