// Organic & Biodynamic Riesling
"Notes of lime, herbs, smoke and mineral. Long and savoury wine with a harmonious tension and vibrancy. We love its generosity and flesh in the mid palate as well as its stony tension. Incredible level of quality for a mere Alsace Riesling thanks to almost half of Dirler-Cade vineyard classified as Grand Cru.
Work of the soil by ploughing to encourage deep roots for a better terroir expression. The vines that make this wine are in average 30 years old. Hand-picked, whole bunch pressing “a l’Alsacienne” with a pneumatic press, fermentation with natural yeast in old oak foudres. Ageing on lees for 10 months." - Mosaique, Importer
"From the Dirler-Cade family, now in the fifth generation, set up in the late 19th century. Organic farmed here. A pretty straight up and down expression. However, GW, in one of his usual moments, spat out “SALTED APRICOTS”, then turned away, shifted his shirt around and fiddled with his (exceptional) mapo tofu that he is cooking at my house currently.
It’s neat and tidy and does the trick. Succulent but with some slickness to texture, yes, salted apricots, some green melon, a bit of green mango, maybe pawpaw but all quite sleek and snappy. Good length of flavour, a sense of poise, a touch of nice crunch through the finish. It’s square, in the sense of the 1940s originating expression, but it delivers easy pleasure." - 91 Points, Mike Bennie, The Wine Front
