"Like most Climats, Le Chevalier was named after its location on the hillside, the highest. In medieval society, le chevalier (knight) was highly ranked in the hierarchy. This title went to the eldest son of a nobleman admitted to the order of Chivalry, a military institution whose members were religiously consecrated. Chevalier-Montrachet is often considered one of the absolute references of chardonnay in the world, and the finest of the three major Grand Crus of this magical hill (Montrachet, Chevalier-Montrachet and Bâtard-Montrachet)." - Domaine de Montille, Winemaker
"On my first tasting, the de Montille Chevalier seemed gigantic and a bit disjointed, but with more time in the barrel its true elegance came through, with lovely, refined aromas of ripe pear and hazelnut; the texture is dense but velvety and there is a very approachable sucrosity on the palate. As winemaker Brian Sieve noted: 'Elevage is the key; it will come.' "Here too there is a hint of mineral reduction lurking in the background of the distinctly cool aromas of Granny Smith apples, white flower, especially acacia, and a vague wisp of exotic tea, all of which is trimmed in moderate wood. There is superb intensity to the sappy medium weight plus flavors that possess a highly attractive sense of underlying tension on the focused, balanced and impressively long and powerful finale.
