"Pinot Noir from the Derwent and Tamar Valleys was hand picked and partially destemmed to open top stainless steel tanks for fermentation. Lightly hand-plunged as required during ferment, followed by gentle pressing off skins to tank for malolactic fermentation, with careful maturation in oak for 10 months (20% new French oak). We demand so much from Pinot, wanting it to be elegant as well as firmly structured. This wine is already intent on performing both to both. Bright strawberry and rose-hip tones, through to sugar-dusted Turkish delight richness and a supporting backdrop of complex, filigreed tannin. Don’t let its bright, translucent colour fool you, this is serious wine and a perfect match for richness, whether it be creamed-based sauces, aromatic grilled meats, or earthy, forest-floor autumnal favours of chestnuts, mushrooms and root vegetables." - Liam McElhinney, Winemaker

"Bright ruby with aromas of pure red cherry, raspberry and wild strawberry fruits with hints of spice, raspberry coulis, leaf litter, crushed herbs, vanillin oak, dried game meats, pomegranate and earth. There's a swell of slick, pure berry and raspberry fruits on the palate, with dreamy, spicy oak and just the right amount of meaty nuance.
