"Our Aligote comes from a unique parcel in the Cote Chalonnaise in the commune of Buxy. For us, this terroir represents a side of Burgundy that’s authentically wild and untamed. The parcel is steep and rocky, made up of classic Burgundian limestone. The altitude here allows for a cooler, more ventilated micro-climate which aids a longer growing season.The vineyard is farmed organically with a deep respect for biodiversity.
Grapes are pressed and fermented in old oak. We prefer hands-off winemaking without additions, utilizing indigenous yeasts and naturally occurring malolactic bacteria. The wine is bottled without fining or filtration and with minimum effective SO2." - O Ma, Winemaker
