The Four Pillars Christmas Gin has arrived! As it is one of our favourite releases every year, we thought we would put together a couple of gins that really titillated our tastebuds this year!


- FOUR PILLARS -

This iconic Yarra Valley distillery requires little introduction, so straight to their delicious special annual release – the 2021 edition of their Christmas Gin!

Four Pillars Distillery Christmas Gin 2021 Edition 700mL - $109

To make this special annual release Cam distills Christmas puddings, then ages this gin for a year in 100-year-old Muscat barrels. The gin has aromatics of classic juniper and a hint of cinnamon, backed up with a rich palate and a hint of sweetness from the Muscat. Sip it neat, mix it with ginger ale or beer, or try it in some great cocktails.


- SOUTH COAST DISTILLERY -

South Coast Distillery was established in 2017 by Luke Harding and Oskar Schwab, but its story really began in 2011. While housemates in Wollongong, Harding and Schwab discovered a mutual appreciation for gin, leading to a tradition of “Martini Thursdays.” Each week, the duo explored all varieties of the spirit, hoping to discover the perfect gin for the ultimate martini. They came close but knew that they could do better. Seeking inspiration, the mates met with distillers far and wide to learn about the craft and focused on perfecting their own recipes. By 2018, they were primed to produce their first commercial release, Sublime Gin.

South Coast Distillery Sublime Gin 700mL – $79

Sublime Gin tantalises with strong aromas of lemon myrtle and cardamom, sweetness and smoothness of dandelion root and a warm peppery finish from grains of paradise.

- DIVINERS DISTILLERY -

Echoes of pine forest, finger lime & woody woody spice on the nose. On the palate a classical theme of citrus & juniper prevails. Macadamia & wattleseed bring the base line, with a counterpoint of aromatic cassia bark, earthy angelica & spicy pepper berry. Gold winner at the Australian Gin Awards 2021 in the Classic Dry Gin category.

Diviners Outlier Gin 700mL - $89

Their night life gin. Aroma of heady kaffir lime, cardarmon and star anise. The palate of native finger lime drives a host of citrus freshness, star anise and myrtle pepper. Silver winner at the Australian Gin Awards 2021 in the Contemporary Gin category.


- ISLE OF HARRIS DISTILLERY -

The Isle of Harris Distillery began with a simple idea. The inspiration came from Anderson 'Burr' Bakewell, who has been bound to this island through a long connection with nearby Scarp, and many decades of life spent among the landscapes of Harris and people of our community. He believed that the rare and elusive spirit of this island could be captured in a bottle and shared with the world. The result is one of the best gins we have ever tasted. Period.

Isle of Harris Distillery Sugar Kelp Gin 700mL - $125

Made with 9 carefully chosen botanicals: Local hand-harvested Sugar Kelp, Macedonian Juniper Berries, English Coriander Seed, Cubebs / Javan Pepper, Bitter Orange Peel, Angelica Root, Cassia Bark, Orris Root, Liquorice

Nose: a well-defined juniper note with pine needles, immediately followed by the fresh citrus notes of bitter orange, lime and grapefruit. Develops a complex floral note of rose and wallflowers with crushed green herbs, coriander and gooseberry all underpinned by mixed spice. Sugar kelp adds to the complexity and richness and gives a dry maritime note.

Palate: refreshing gin with good balance between the bitter juniper and pine and the sweet fruit flavours of mango, grapefruit and orange. A green herb flavour has developed of crushed coriander. Distinctive and smooth with a dry, flinty taste.

Finish: overall a long, clean finish. As the juniper and citrus fade away, sweet vanilla and black pepper remain with a gentle reminder of the sea.
