It was all smiles exactly one month ago today, when we teamed up with the crew at FOSH Restaurant to pour the range of William Fevre's 2023 Premier & Grand Cru Chablis - one of our favourite dinners in recent memory!

Set to enter through our doors come early May is our full allocation of Fevre's 2023.  '23 was a more sunny season for the region, with ample volumes, so care was required in the vineyard and at harvest to ensure the grapes were perfectly ripe and still feature that sweeping salinity we love from the Fevre style.

In store and ready to sip on right now is their AC Village Chablis, which provides an ample peek into the style of the vintage, down at an ongoing special price indefinitely! For those looking to delve further, find the full list below - there's certainly plenty to pick from! Beloved premier cru vineyards like the Montmains, Montee de Tonnerre and Vaillons all excelled with the Vaulorent again showing Grand Cru-like depth and complexity. Grand Crus like the Cotes Bouguerots, Vaudesir and the show-stopping Les Clos show exceptional power, minerality and shape to drink now, as well as the ability to improve steadily in the bottle. You'll also notice the estate have introduced a new look to their labels, bringing it more in line with the modern standard!

A clear takeaway from our dinner was this vintage is a triumph showcasing first-class purity, depth and balance. They are utterly delicious now and will improve through the short-medium, and long term for the best wines. This 2023 vintage comes very close to the quality of Fevre’s tremendous 2019 season, and we warmly recommend them to any Chablis enthusiast looking to see the evolution of this icon first-hand.

"Sourced from a mosaic of exposures and elevations and incorporating old vines planted between 1969 and 1972, the 2023 Chablis Village offers aromas of pear, white flowers and freshly baked bread. Medium to full-bodied, ample and charming, it is underpinned by ripe yet racy acidity and concludes with a long, saline finish. Chablis 'Montmains' 1er Cru 2023

"In the hands of Fèvre winemaker Didier Séguier, premier cru Montmains has a certain initial reserve. But with time, the green apple and gooseberry notes, touched with acacia blossoms and spice, open up on the palate. The texture is lively and fresh, yet there is substance here as well. The grapes are assembled from 10 parcels throughout Montmains, including some in Forêts and Butteaux. Séguier explains that Butteaux is deep in the valley and further from the Serein so it ripens later. The grapes are fermented in tank and older casks for 40–50% of the harvest." - 95 Points, Charles Curtis MW, Decanter

Chablis 'Vaillons' 1er Cru 2023

"Sourced from a sunny, precocious site that is typically among the first to be harvested, the 2023 Chablis 1er Cru Vaillons delivers aromas of beeswax, orange oil, pear and honeysuckle. Full-bodied, enveloping and charming, it is underpinned by ripe yet vibrant acidity and concludes with a saline finish, reflecting the personality of the warm vintage. Chablis 'Fourchaume' 1er Cru 2023

"The 2023 Chablis 1er Cru Fourchaume, sourced from a 3.6-hectare, clay-rich, south-facing parcel at the bottom of the slope in Vaulorent, opens with aromas of orange peel, white flowers and oyster shell. Medium- to full-bodied, the palate is fleshy yet lively, underpinned by bright acidity and concludes with a long, saline finish. Chablis 'Montee de Tonnerre' 1er Cru 2023

"This powerful, thrilling wine shows pronounced, ripe aromas of mirabelle plum, nectarine and green apple, with a strong underpinning of flinty minerality and smoky reduction. The texture is tightly wound and compact; it's substantial, but not heavy, carrying the wine to a marvellously long finish. The grapes are from 2.24ha in the lieux-dits Pied d'Aloup, Côte de Bréchain (planted 1936), and Chapelot, fermented in a combination of tank and cask, ageing now on the lees prior to bottling. Ideally wait five years before opening and drink over the next 30." - 94 Points, Charles Curtis MW, Decanter

Chablis 'Vaulorent 1er Cru 2023

"The Vaulorent from Fèvre is more mineral than its Montée de Tonnerre, if a bit less lush, with aromas of lime peel, mirabelle plum, and passion fruit. The texture is chiselled and concentrated, with layers of tightly wound extract and a dense, chalky finish. The grapes are from 3.6ha in Vaulorent, which is part of Fourchaume but located on the side of the grands crus. Winemaker Didier Séguier chooses his favourite blocks for this bottling and crafts a 'classic' Fourchaume from the rest." - 95 Points, Charles Curtis MW, Decanter

Chablis 'Bougros' Grand Cru 2023

"Sourced from 60- to 70-year-old vines rooted in deep soils and invariably among the richer, more muscular wines in the range, the 2023 Chablis Grand Cru Bougros delivers aromas of peach, orange oil, beeswax, honeysuckle and pear. Medium- to full-bodied, ample and fleshy, it possesses a rich core of fruit underpinned by ripe yet lively acidity. Chablis 'Bougros - Côte Bouguerots' Grand Cru 2023

"Sourced from a site closer to the river, defined by a steep 40% gradient and cooler nights, the 2023 Chablis Grand Cru Bougros Côte Bouguerots is entirely different from the fleshy, muscular Bougros bottling. It offers aromas of lemon oil, oyster shell and white flowers. Medium- to full-bodied, it is taut and structured, with bright acidity, ample dry extract and a long finish. Stylistically, it recalls Les Preuses more than the usual Bougros archetype. Chablis 'Vaudesir' Grand Cru 2023

"Sourced from a rather sunny, precocious site, the flamboyant 2023 Chablis Grand Cru Vaudésir opens with aromas of ripe citrus fruit, pear, peach and dried flowers. Chablis 'Valmur' Grand Cru 2023
$260 pre-arrival special ($300 RRP)

"Starting with a whiff of smokiness, this moves into crushed chalk, rock salt, dried pear and pluot. This solid block of flavor is easily supported by the vigorous acidity and suspicion of (older) oak tannins on the slowly fading finish. Given its chilly positioning at the top—almost plateau—of the slope, this typically needs time, and it does again in this vintage." - 95 Points, Tim Atkin MW

Chablis 'Les Preuses' Grand Cru 2023

"Sourced from an east-facing slope that yields one of the racier and more ethereal wines in the range, the 2023 Chablis Grand Cru Les Preuses opens with aromas of oyster liquor, orange peel, white flowers and lemon oil. Medium- to full-bodied, taut and tensile, it is nakedly chalky, incisive and searingly saline. Chablis 'Les Clos' Grand Cru 2023

"This is a grandiose Clos with exceptional power and dimension—built for the long run. Its nose is currently reticent, but its palate is loquacious with bushels of just-picked citrus, pear slices, straw, warm grains and salt farm breezes. Exceptionally fresh, especially for the vintage, this is artfully chiseled on the palate." - 97 Points, Tim Atkin MW

"Year after year, Fèvre's Les Clos is among the great wines of Chablis. In 2023, the pronounced aromas range from grapefruit to nectarine and green apple, laden with pungent, salty mineral notes and a little smoky reduction – a bit of everything, really. The texture is dense, almost impenetrable at this age, but enlivened by a lovely hint of bitterness at the end. It is truly a wine for the ages.
