"The Vin Jaune made from the Savagnin is fermented prior to the wine being entrusted to nature for a period of 6 years and the flor. This unique aging process under veil brings to the wine complex aromas of nuts, hazelnuts, curry, almonds and so much more …. it is bottled in the distinctive 620 ml Clavelin bottle. "He had one barrel of 2013 Vin Jaune from his father that he bottled after nine years of aging under flor. He thinks cold vintages work better for flor, when the wines have high acidity and a low pH. The bottled wine has 16% alcohol and still keeps an extremely low pH of 2.9, denoting tons of freshness. I wouldn't dare ask him to open one of only 245 bottles produced, but he had a little bit of wine in a bottle that had been open for days (which sometimes is better); but in this case, the sample was not pristine and there was some oxidation, but the wine showed its true colors through pungent notes of green nuts, curry and smoke and a powerful palate with lots of concentration and searing flavors. His goal is to bottle his Vin Jaune 10 years after the harvest, and he has built an aboveground (warm and dry) cellar for that.
