"This wine is predominately Single Vineyard Pinot Noir, an expression of single clone hand picked on the 9th April . These are from 20-year-old vines grown on gravelly/volcanic terroir located in the Coal River Valley (Tea Tree). There is a 20% component of Biodynamic fruit from Petrichor vineyard in the wine. Handpicked at optimum fruit sugar/acid balance. The Pinot was de-stemmed retaining 20% whole bunches. Cold soaked for 6 days. Wild yeast, hand plunged with fermentation lasting 10 days. Basket pressed to older oak barriques (220L) and allowed to undergo MLF and mature in barrel for 11 months on fine lees. Delicate representation of Pinot Noir, the wine has power, length and balance on the palate. Layered and complex, this textural wine is a wonderful pairing for complex dishes. This wine has the ability to age and is a medium-term cellar proposition." - Winemaker Notes
