Certified organic. This Pinot Grigio comes from a heritage site in the vineyard that was establishedd in 1982. The grapes were hand harvested in late February and whole bunch pressed into 70% stainless steel and hogs heads (30% new). The wine underwent a wild ferment without sulphur, and was left on lees without battonage to increase texture. It's a great example of the complexity and texture coming from these organically run vineyards nearly a decade on.
It shows a salt-spray and oyster shell minerality on the nose, with the palate flowing with ripe green pears and wild honey. An excellent example of Pinot Grigio." - Bibendum, Distributor
