"Single Cask Nº TD0449 was distilled in November of 2013 and decanted in May of 2025 maturing at 11 Years, 6 Months old in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 50% ABV, this cask yielded just 212 bottles.
Nose of soft, fruity and gently floral, opening with honeyed sweetness and delicate jasmine. White chocolate, rice bubbles and rice pudding create a creamy, nostalgic core, supported by vanilla milkshake and malt. Buttery textures and subtle oak weave through wildflowers and soft florals, with vanilla and marshmallow adding warmth. Dates and musk sticks bring confectionery depth, while a faint note of pink hand soap lends an intriguing, perfumed lift.
Palate of juicy and fruit‑forward, with a tropical punch of pineapple upside‑down cake, tinned peach, fruit jubes and mango purée. The body is full and syrupy, with a silky texture and a gently building tannin structure. Pistachio adds nuttiness, while custard and maple syrup bring sweetness and richness. A yoghurt‑like creaminess and a touch of liquorice round things out, creating a layered and evolving palate.
Finish is comforting and pastry‑driven, with milk bottles, honey muffins and warm custard buns leading the way. Brown sugar and crème brûlée deepen the sweetness, while waxy macadamia and honey add weight. Warm oats and a gentle wooden note provide structure, with sarsaparilla and a subtle dill pickle nuance adding a quirky savoury edge.
