"The fruit for this wine is sourced from Carl Brown’s certified organic Alanbrae vineyard in Colbinabbin. It is produced using 95% whole bunches and fermented with wild yeast in a 4000L concrete vat, with fermentation initiated by a vineyard-derived pied de cuve. As with all Syrahmi Shiraz vintages, carbonic maceration is employed, and the wine remains untouched for the first seven days. After this period, gentle hand and foot plunging is carried out, followed by malolactic fermentation. The wine is then matured for 28 months in a 2800L seasoned French oak foudre. It is bottled unfined and unfiltered and undergoes a further two and a half years of bottle aging prior to release." - Syrahmi, Winemaker
"The 2021 Syrahmi Once In A Lifetime is a highly nuanced in a modern-style Heathcote frame, with dark earth, red cherry and licorice aromas that build in the glass. Densley packed yet also fresh and light on it’s feet thanks to fresh acidity. Willowy in shape, young and vibrant, kept tight thanks to meaty tannins driving a ling singular finish.
