"Selective hand-harvesting, whole cluster pressing and spontaneous fermentation in 70% stainless steel tank & 30% large 2,500L oak. Matured on full lees in stainless steel tanks and on the fine lees for a further 3 months. The interplay of climate and soil in the Danube region forms the basis for the character of our wines. Outliers of the Pannonian, continental climate bring hot, dry days to the area. Cool air currents from the higher-altitude Waldviertel region mix and temper the air, which can reach temperatures of up to 38°C. The soils are equally unique and ideal for viticulture: Firstly, there is Gföhl gneiss, the primary bedrock, overlain by brown earth. Sometimes a layer of limestone is also found in between. Secondly, there is loess, windblown dust from the Ice Age, which has compacted into fertile soil. And finally, there are the clay and gravel soils." - Weingut Loimer, Winemaker
