"Vaillons, from the left bank of the Serein river, usually combines crisp acidity with floral notes and an attractive stoned fruit flavour profile. Softer, and a little less precise than the Fourchaume, this displays peach and crisp apple fruit notes allied with roundness and warmth on the palate. "An elegant and attractively floral suffused nose flashes good Chablis typicity with its notes of petrol, pear and ocean breeze. There is fine vibrancy to the sleek and refined medium weight flavors that offer both good minerality and salinity on the lingering, balanced, clean and appealingly dry finish. This is really quite lovely and while this could certainly be enjoyed now, for my taste I would continue to hold it for another 3 to 5 years.
