"The brand new Blanc de Blancs NV is the sister to our stellar Rosé: with Tasmania’s beauty and strength at the fore. Delicate white flowers blend effortlessly with lemon curd, toasty shortbread and white nectarine. The palate is elegance defined, with a long finish of fresh cream and preserved lemon. ‘Bis’ is French for ‘the space in-between’, which encapsulates the process and inspiration it took to make this exquisite non-vintage blanc." - Natalie Fryar, Winemaker
"Fresh and precise, there’s spring blossom, sun-soaked hay, crisp golden delicious apple and a sea breeze of minerality. The bead is fine and cloudlike, helping provide a mouth-filling and creamy texture. There’s so much joy here, lemon pith and salted butter balance out the moreish umami, toasted sourdough and struck match tones. There’s no shortage of energy, but its excitement is grounded in a core of great fruit and a well-built structure. Layers of fine, briny texture lead to a lingering savoury finish on the palate. A long-lived sea-farers delight." - 93 Points, Cassandra Charlick, Decanter
