"The majority of the blend came from Yarra Junction with a small amount (approx 10%) sourced from a 20 year old vineyard at the high end of Dixon’s Creek. Both vineyards are planted to MV6 clone but the Dixon’s Creek site was picked earlier to maximise acidity whilst the Yarra Junction site was picked later to provide tannin with added ripeness. Approx. 80% of the Yarra Junction site and all of the Dixon’s creek site were destemmed and fermented in stainless steel, pressed and racked to barrel. The remaining 20% from Yarra Junction was fermented separately as 100% whole bunch. All wines ticked through MLF in neutral oak with SO2 added at the beginning of June.
