Description / Reviews
"Harvested at the optimum maturity, grapes are directly pressed before the juice goes in tanks by gravity. The juice doesn’t receive any sulfites till the end of the fermentation. As the malolactic fermentation is not suitable for my terroir, sulfites are added only once, right before the aging. It is a minimum intervention wine aged for 8 months on lees, with regular batonnages all along the winter season." - Domaien de la Combe, Winemaker
"Light yellow, bright colour, with a creamy, faintly cheesy lees-derived bouquet; a floral note undeneath is faintly reminiscent of riesling. The palate is crisp and lean, refreshing and lively, dry and with abundant acidity which is nevertheless soft and gentle. Light-bodied and very appetising, and needs oysters." - Huon Hooke, The Real Review (2020 Vintage)
