A prestigious new name for the region, Domaine des Cabottes was created following the sale of Bouchard to Artémis Domaines (Chateau Latour). Cabottes - splintered on its own from Bouchard - features the best vineyards from its older brother's Côte de Beaune holdings (35 hectares, to be precise), with the ultimate end goal of ultra-precise, parcel-by-parcel viticulture, soon to be replete with its own specialised facilities and extended winemaking team.
PJ McMillan, head chef at Harveys Bistro on James Street, has once again conjured up the perfect pairing menu to pair alongside this involved lineup, ensuring that this is to be a gastronomic journey blessed by his own talented touch.
