"The fruit for our Gregor is first handpicked then placed onto racks and semi-dried in the timehonoured ‘Appassimento’ method. This method concentrates the sugars and flavours of the fruit, creating a full bodied, well balanced Shiraz. Named in honour of a very fond memory from early in Greg and Allison’s relationship - a skiing instructor who had a hard time pronouncing ‘Gregory’. "Deep red colour with traces of purple and brick in the tints. The bouquet is reserved and herbal with a note of dried thyme, a little charred oak, and a subtle lift of either volatile acidity (VA) or alcohol. The palate is very full-bodied and coats the tongue with an abundance of rich tannins. The VA is not confirmed on the palate: it is possibly just elevated alcohol strength.
