"Emily’s Paddock with it’s easterly facing slope is our smallest vineyard of 2.7 hectares. Low yields create intense flavours while the wine is known for its firm tannin profile. Shiraz and Cabernet Franc co-fermented with natural yeasts, kept on skins for 5-6 weeks and given a gentle press, matured for 12 months in French oak." - Jasper Hill, Winemaker

Boasts a core of tightly coiled black and blue fruits, blackstrap licorice, vanilla pod, dusty cacao, allspice, crushed fennel seeds and red earth. There's an energy brewing – you can feel it.
