"Moppa Shiraz is a wine that captures the essence of our high north-western district. Sourced from over 12 distinct sites, the blend is artfully enhanced with a 2% splash each of Petit Verdot and Viognier for layered complexity. Vintage 2025 was early. Our Shiraz was harvested in small batches between February 18th and March 12th, including a parcel co-fermented on Viognier skins to lift aromatics. The late-ripening Petit Verdot followed on March 21st. Following wild fermentation in open-top fermenters and traditional pressing, the wine matured for 14 months in hogsheads (20% new French, American, Hungarian, and Romanian oak, balanced by seasoned barrels), ensuring the true character of Moppa shines through.
