Sitting on the same ridgeline as Savaterre and Giaconda, up at 500 metres above sea level, Sentio's wholly-owned Black Springs vineyard in Beechworth sits on granitic sands, and on its first limited release this year, has produced a multi-layered stunner. A very aesthetic style of chardonnay, with crumbly creamy nougat, cedar spice, roasted almonds, and delicious mineral core. Compared to the Lusatia Park, it's the more heightened and structured of the two, and as with any creation coming out of Beechworth these days, has endless potential to grow over the next decade or so.
