"Sustainable culture, no herbicides. Partial grassing with mechanical working of the soil. Harvested by hand only, in openwork crates of 15 KG. The bunches are cooled and 100% destemmed before vatting in wooden vats for 2 weeks. Cold pre-fermentation maceration before alcoholic fermentation using indigenous yeasts. Gentle extraction by alternating manual punch downs and pump overs. In French oak barrels for 12 months. 25% new barrels, then blended for 6 months in vats before bottling." - Bader Mimeur, Winemaker
